{"id":1267,"date":"2022-12-18T19:46:54","date_gmt":"2022-12-18T19:46:54","guid":{"rendered":"https:\/\/schmackofaz.de\/?p=1267"},"modified":"2022-12-18T19:46:54","modified_gmt":"2022-12-18T19:46:54","slug":"dinkeltoastbrot","status":"publish","type":"post","link":"https:\/\/schmackofaz.de\/?p=1267","title":{"rendered":"Dinkeltoastbrot"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Zutaten<\/h2>\n\n\n\n<p>1 kg Dinkelmehl 630<\/p>\n\n\n\n<p>100 g Dinkeldunst<\/p>\n\n\n\n<p>700 g Wasser<\/p>\n\n\n\n<p>15 g Salz<\/p>\n\n\n\n<p>5 g Hefe<\/p>\n\n\n\n<p>1 TL Zucker (alternativ \u00bd Teel\u00f6ffel Honig)<\/p>\n\n\n\n<p>50g \u00d6l nach Gusto (Raps\u00f6l ist milder, Oliven\u00f6l hat etwas mehr Geschmack)<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Zubereitung:<\/h2>\n\n\n\n<p><\/p>\n\n\n\n<p>Die Hefe zusammen mit dem Zucker\/Honig im Wasser aufl\u00f6sen und ca. 20 Minuten ruhen lassen. In der Zwischenzeit das Mehl sieben und alle weiteren Zutaten in Sch\u00fcssel geben. Wenn die aufgel\u00f6ste Hefe anf\u00e4ngt leicht zu blubbern, kommt das \u201eHefewasser\u201c mit in die Sch\u00fcssel und das Mischen in der K\u00fcchenmaschine kann losgehen.<\/p>\n\n\n\n<p>Danach den Teig mindestens 12 Stunden bei Zimmertemperatur ruhen lassen. Ich setze den Teig gern abends an und backe dann direkt ganz frisch vor dem Fr\u00fchst\u00fcck.<\/p>\n\n\n\n<p>Den Backofen auf 205 Grad vorheizen. Ich benutze gern meinen Dutchoven \u2013 da wird die W\u00e4rme gut gespeichert und ich bekomme gleich die richtige Form. Die Backzeit ist abh\u00e4ngig von Ofen, Kastenform usw. Bei mir dauert es ungef\u00e4hr 30 Minuten, bitte beim Backen beobachten.<\/p>\n\n\n\n<p>Brote in ca. 1 cm dicke Scheiben schneiden und etwas \u201eantrocknen\u201c lassen, damit diese beim Einfrieren nicht aneinander kleben.<\/p>\n\n\n\n<p>Die ersten Scheiben nach dem Backen ben\u00f6tigen nat\u00fcrlich noch keinen Toaster.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images
