Dazu werden die Kr\u00e4uter, die getrocknete Tomate und der Knoblauch fein gehackt. Wer frischen Chili verwendet, muss den nat\u00fcrlich auch zerh\u00e4ckseln. Die ganze H\u00e4ckselei wird dann mit den anderen Zutaten vermischt und bekommt dann erst einmal eine Stunde Ruhe.<\/p>\n\n\n\n<p>In der Zwischenzeit schneiden wir den Braten in der Mitte ein und stoppen ca. drei Zentimeter vor dem Rand. Das Innere des Bratens wird gro\u00dfz\u00fcgig mit der Marinade eingestrichen. Dann wird der Braten zusammengerollt und mit hitzefester K\u00fcchenschnur zusammengebunden. Mit indirekter Hitze dauert das Garen dann gut vier Stunden, der Braten ist fertig, wenn die Kerntemperatur von 70 Grad erreicht ist.
