Dann alle Komponenten in der K\u00fcchenmaschine gut verkneten.<\/p>\n\n\n\n<p>Den Teig eine Stunde in der abgedeckten Sch\u00fcssel ruhen lassen und anschlie\u00dfend Kugeln von ca. 80 g formen. Diese kommen dann ausreichend bemehlt (wieder mit Dunst) in ein geeignetes Gef\u00e4\u00df. Mit einem feuchten Tusch abgedeckt kommt die ganze Fuhre \u00fcber Nacht in den K\u00fchlschrank.<\/p>\n\n\n\n<p>F\u00fcr die frischen Br\u00f6tchen am n\u00e4chsten Morgen wird nur noch der Backofen auf 200 Grad vorgeheizt. In der Zwischenzeit die Teiglinge auf Backpapier oder Backfolie geben und mit einer Rasierklinge oder einem sehr scharfen Messer einschneiden.
