Danach 24 bis 48 Stunden im K\u00fchlschrank pupsen lassen.<br>Nach der Ruhephase wird der Teig auf eine gut bemehlte K\u00fcchenplatte auf 1 cm Dicke ausgerollt. Mit einer runden Form (9 cm Durchmesser) steche ich die Buns aus und lasse sie auf der Backfolie unter einem feuchten Tuch noch einmal 2 Stunden gehen. Anschlie\u00dfend werden die Teiglinge mit Wasser bestrichen und mit Sesam (oder anderen K\u00f6rnern der Wahl) bestreut.<\/p>\n\n\n\n<p>Bei 205 \u00b0C mit Dampf (Stufe 3) bis zur gew\u00fcnschten Farbe backen.
